This paper established a phenol - sulfuric acid method for determining the method of olive leaf polysaccharide content, the result shows that the optimized result shows that: A2B1C1D1, namely the best conditions is phenol 0.8 mL, 4 mL of sulfuric acid, reaction temperature 20 ℃, the reaction time is 10 min. The recovery rate is 99.95%. The polysaccharide content is 12.064±0.265 mg/g.
