Clarification is a key link in the processing of melon juice. This paper determines by single factor and corresponding surface experiments that the optimum conditions for clarifying melon juice are: chitosan is 6.2%, clarification temperature is 30 ℃, the clarification time is 36 hours and the light transmittance is up to 76.44%.
