啤酒的酿造和质量直接受到啤酒大麦品质的影响。随着系统生物学和生物信息学的发展,啤酒大麦和麦芽的蛋白质组学正日益成为研究热点。对蛋白质组学及研究方法,及其在啤酒大麦品种鉴定、质量分析、麦芽制造和品质影响研究中的应用进展进行了概述,展望啤酒大麦及麦芽中蛋白质组今后的研究方向进行。

The brewing and quality of beer is directly affected by the quality of beer barley. With the development of system biology and bioinformatics, proteomics of malting barley and malt are becoming a research hotpot and have made important progress. In this paper, the proteomics and research methods, as well as its application in variety identification, quality analysis malt manufacture and quality impact of malting barley were summarized, and the future research direction of proteomics in beer barley and malt was prospected.
